INGREDIENTS
16 6-inch rounds rice paper
8 leaves lettuce, washed, dried and torn or chopped
2-3 carrots julienned or shredded
red or yellow bell pepper, also julienned or cut into small strips
red and green chilis very thinly sliced
½ cup fresh mint leaves
½ cup fresh Thai basil leaves
½ cup fresh cilantro leaves
32 poached or steamed shrimp
Peanut sauce:
1/2 cup salted creamy peanut butter
1-2 Tbsp tamari or soy sauce
1-2 Tbsp honey
2-3 Tbsp lime juice
1-2 Tbsp water to thin

RECIPE PREPARATION
Fill a pie plate or large shallow bowl halfway with room-temperature water. Immerse 1 wrapper at a time in the water until it softens, about 30 seconds. Use both hands to pull it out of the water, being careful so it doesn't collapse on itself, and immediately lay it flat on a clean work surface.
Place chosen ingredients in the center of the wrapper in a neat pile.
Fold the top and bottom of the wrapper over the filling. Fold the left side over the filling and continue rolling tightly to the right until it's closed and snug. If not eating right away, place rolls on a plate, seam side down, and cover with a damp towel until ready to serve.
Serve with peanut sauce.
